Not Freezing the Meat Properly

The best meat supplier will ship your meat to your door in quality packaging and already flash-frozen to keep its flavour and juices. But, you won’t have this convenience when you buy your beef from a butcher or store. In fact, you are likely to freeze your steak wrong. The best way to keep your steaks fresh and avoid freezer burn is to wrap an aluminum foil tightly around every piece. Then put the cuts in a plastic freezer storage bag. Make sure to remove all air before you seal the bag.

Thawing the Meat Wrong

When thawing your beef, do not do it in the microwave or on the counter at room temperature for hours. Defrosting the meat in the microwave will dry the meat out or even make it unsafe to eat when left in the microwave for too long. The best way to thaw your beef is to do it in the fridge. Just ensure to keep it in their freezer packaging and leave it in the fridge for 24 hours.

Cooking the Meat Cold

Cooking your steak cold will make it cook unevenly. In fact, a damp surface can make it hard for you to make a good sear. If you have to leave your meat at room temperature, do it only for around thirty minutes. Take the meat out of the fridge 30 minutes before you cook it. Make sure to dry it off and sear it in a hot pan.
